When I click on 'Show Players Inventory' it displays the quantity of the item but I cannot see what the item is.

If RAT is running on a different machine than the server, please follow these instructions: [DOC] - Manually Importing Item Icons (For player inventory)
If RAT and the server are on the same machine, click Tools -> Export Images. Wait for that to complete. Can take 30ish seconds or so.
Then click Tools -> Import Images. You should see a copy window popup with a progress bar. Wait for that to finish, then try looking at someone's inventory again. =)
